Summer Activities — Create An Icecream Watermelon Dessert

Kids will have fun making this whimsical dessert from their favorite ingredients. Enjoy the treat at summer gatherings of relatives and friends. You can even eat the seeds in this watermelon!

Summer Activities For Kids - watermelon dessert

You will need:

  • 1 plastic lettuce crisper or other oval shaped mold
  • 1 quart lime sherbet
  • 1 quart strawberry or raspberry ice cream or sherbet (if using ice cream, do not use brands with fruit chunks in it)
  • 1 cup semisweet chocolate chips
  • lime slices, mint leaves, strawberries, fruit juice, and sparkling mineral water (optional)

Spread lime sherbet along the sides of the lettuce crisper, making a layer about 1″ to 1 1/2″ thick along all sides and leaving a cavity in the center. (This is the rind.) Kids will enjoy smooshing the ice cream around — watch that their hands don’t get too cold. Fill the center cavity with strawberry or raspberry ice cream, adding chocolate chips (the seeds) as you go along. Chill in freezer for at least six hours.

When you’re ready to serve, place a warm towel around the mold until the ice cream slips out of the bowl. Place on its side on a serving platter. (It should resemble a watermelon half). Garnish with lime slices, mint leaves, and strawberries. To serve, slice off individual servings, just as you would with real watermelon.

For a healthy beverage to go with the dessert, add fresh fruit juice or sparkling mineral water — a nice alternative to sugary soft drinks. ENJOY!
