Ok… a pumpkin cheese ball isn’t exactly a meal, but we sure enjoyed it yesterday at lunch.  It was so easy & so cute!

I adapted a fiesta cheese ball recipe I found, by adding jalapeno ranch mix & habanero salsa.

16 ounces softened cream cheese
2 cups grated cheddar cheese
3 Tbsp salsa (I used habanero to make it spicier)
3 Tbsp chopped green onions
1 Tbsp jalapeno ranch mix (optional)
crushed nacho cheese doritos or tortilla chips
bell pepper stem (I was cooking fajitas, so I already had a bell pepper)
