Sunday Dinner – Potato and Onion Tart

My kids came over for lunch after church…and brought their friends to join us.  Steve cooked 2 whole chickens in his greaseless turkey fryer.   It’s one of our favorite meals these days.

Next time, I’ll share pics of his chickens.  Today I”ll share an easy way to cook potatoes. . . Potato & Onion Tart!

Potato and Onion Tart

You’ll need 2 pounds potatoes (I used red), large onion, rosemary, olive oil, feta cheese, mozarella cheese, salt & pepper.

Potato & Onion Tart sauteSlice onion thickly (more than 1/4″). Saute in 2 Tbsp olive oil. Sprinkle 1-2 Tbsp rosemary on top.  Flip onion slices when brown & sprinkle more rosemary.

Potato & Onion Tart cheeseAdd 3-4 Tbsp olive oil, 1 cup feta cheese, 1 cup mozarella cheese , salt & Pepper. Stir together.

Scrape spices & onions from skillet and place on top of tart.
