Do you ever change your mind on what to fix for dinner, at the last minute?
That’s what I did. And I created this new family dinner recipe you can make in a jiffy.
I planned on frying some chicken and making mashed potatoes. After putting a pot of water on the stove for potatoes, I decided I wanted something easier.
So, I cleaned the potatoes and put them in the oven at 400 for baked potatoes.
Should I keep the fried chicken? Nah!
I found a recipe, but didn’t have the bacon or the right cheese. Instead I had hard salami and mozzarella cheese. Here’s what I made:
Cut hard salami into 3 strips for each piece. Crisp up in a tablespoon of olive oil. Drain on paper towel.
Cut off fat from chicken breast & then split horizontally. This makes more pieces and your cooking will be more even.
Sprinkle chicken with salt & pepper. Brown both sides in skillet. If the insides are still pink, add a little water and simmer until just done in center. If you overcook, they will be tough.
While the chicken is cooking, gather the fixings for your potato bar. I grated cheese for the potatoes & the chicken. My family loves black olives.
This reminds me of many years ago when Steve would work late one night a week. Most of those Mondays (yes, he worked very late on Monday nights), I baked potatoes for the kids. We loved potatoes, but Steve prefers rice. My kids would always ask me to slice black olives for the potatoes. Thus, I still have black olives for our baked potatoes.
You can put whatever you like . . . green onions, tomatoes, mushrooms, green olives…as long as it is EASY to fix!
Oh yeah, the chicken is ready, so let’s put this family dinner together.
Baked potato on each plate <check>
Chicken breast on each plate <check>
A couple slices of crispy salami on top each chicken breast <check>
Grated mozzarella cheese makes the next layer <check>
Avocado slices <check>
Hunter doesn’t like avocado, so he doesn’t get any of that yummy goodness. I could live on avocado!
Voila!
Then dive into this delicious chicken. The crunch of the salami combined with cheese & avocado add yummy variety to your next chicken dinner.
