I took this idea from a recipe on Pinterest that had chicken salad on top a half avocado. Here’s what I did:
Layered from bottom up:
Green Leaf Lettuce
Half Avocado
Shrimp Salad
Cilantro leaf for decoration
Sprinkle Crunched Tortilla Chips on top
Set Cherry Tomatoes to side for garnish
Shrimp Salad Recipe (for 2)
Remove shell from 3/4 pound shrimp. Boil for a few minutes to cook. Place in refrigerator or put ice on top of shrimp to cool.
Chop shrimp into small pieces. Add chopped cilantro, chopped red pepper, chopped green onions, 1-2 Tbsp sour cream, salt & pepper.
Optional: chopped jalapeno to add spice
Mix together and scoop on to avocado.
